Sometimes we have offered or are asked to bring a contribution to the menu. A few things to consider are the temperature outside, whether electricity is available, and where and how long the food will be held. Hot food must be kept hot and cold food must be kept cold. If electric- ity is available, slow cookers and warming trays may be used to keep food hot. There are many ways to keep food cold, the easiest way is to have a container larger than your serving container which is filled with plenty of ice. Simply keep your serving dish in the ice filled container. Here are some tried and true recipes that will be welcome at your outdoor events! Don’t forget your sunscreen and bug spray! Cowboy Beans 1poundbacon 1largeyellow onion,chopped 2clovesgarlic,minced 1poundground beef (I prefer 85/15 ground beef) Three 16 ounce cans of baked beans Two 15.5 ounce cans of kidney beans, drained Two 15.5 ounce cans ofcannellini beans, drained One 15.5 ouncecan of black beans, drained ¼cupbrown sugar ¼cupapple cider vinegar 1cupketchup 2tablespoonsyellow mustard Salt and pepper, to taste Chop the uncooked bacon into small pieces. Over medium- high heat, brown the bacon in a large pan. Tip--you can cut the bacon into small pieces with clean kitchen scissors right into the pot.Remove the cooked baconto a small bowl with a slotted spoon.Leave the bacon grease in the pan and then add the chopped onionand brown for 5-6 minutes until translucent;add the minced garlic, stir for one minute. Add the ground beef to the pan and cook until the ground beef is cooked through. At this point, you can assemble your cowboy beans in a large casserole dish or slow cooker. Place onions, garlic, ground beef, bacon and all remaining ingredients in your casserole dish or slow cooker.Stir until well combined. Cook inslow cooker on “Low” for four hoursorbake at 350 degrees for 1 ½ hours covered with foil. Serve hot. Corn Salad 4 cups cooked corn kernels, cooled 1½ cups mayonnaise ½ cup sour cream 1 (1-oz) packet ranch dressing mix 1/2 teaspoon garlic powder 1/2 teaspoon onion powder 1/2 teaspoon paprika 2 cups shredded cheddar cheese 1 cup cooked bacon, chopped 3 green onions, chopped Salt and pepper, to taste In a large mixing bowl, whisk together the mayonnaise, sour cream, ranch dressing mix, garlic powder, onion powder, and paprika until smooth. Add the cooked corn, shredded ched- dar cheese, bacon, and chopped green onions. Toss everything together until evenly combined. Cover the bowl and refrigerate the salad for a few hours to let the flavors meld together. Taste and season with salt and pepper just before serving. You can use any type of corn you wish, as long as it is cooked and cooled before you assemble the salad. Next >
