Now that’s something to celebrate! www.DelawareGrown.com Southern Delaware Cooking My husband and I are “empty nesters” and I am finding it hard to not cook as though our nest was still full! When faced with the results of cooking too much food, there are choices to be made. Do we eat leftovers too many times, share food with friends and neighbors or eventually end up throwing food away? I have been choosing another option…freezing leftovers for a quick meal to eat later. I recently purchased some silicone cubes with lids for freezing food. These cubes are game changers! They come in different sizes, the frozen food pops right out of them and the cube shapes stack nicely in the freezer. I have three siz- es—two cups, one cup and one-half cup. I like to wrap each cube in a piece of parchment paper and then put the cubes in freezer bags. You can certainly wrap and freeze them any way that makes you happy. Here are two recipes that I have found freeze and reheat well. Having meals in the freezer will help you as you bustle around getting all your holiday preparations completed! Macaroni and Cheese Cook one pound of macaroni noodles in salted water for nine minutes. Drain and rinse well in cold water to remove ex- cess starch. Melt one stick of butter in a large saucepan. Whisk in ½ cup of all-purpose flour. Slowly stir in 3 cups of whole milk and 1 cup of half-and-half. Whisk over medium-high heat, stir- ring constantly, until it begins to bubble. Stir in 8 ounces of grated Gruyere cheese and 12 ounces of grated sharp Ched- dar cheese. Allow cheeses to melt and add 2 teaspoons of black pepper, 2 ½ teaspoons of salt, 2 teaspoons of dry mus- tard and ¼ teaspoon of grated nutmeg. Stir noodles into cheese sauce. You can serve the macaroni and cheese right away or you can place it in a greased cas- serole dish and bake at 375 degrees for 35 minutes. I prefer to serve it without baking; it is creamier at that point. Paula’s Sloppy Joes One pound ground beef 1 small onion, minced ½ cup green pepper or celery, minced One 8-ounce can tomato sauce ½ cup ketchup 1 tablespoon brown sugar 1 teaspoon dry mustard ½ teaspoon salt ½ teaspoon black pepper 1 tablespoon Worcestershire sauce 1 tablespoon vinegar Brown ground beef and minced vegetables in a skillet or large saucepan until the meat is cooked and the vegetables have started to soften. Drain the accumulated fat. Add the remaining ingredients and simmer until the vegetables are done to your liking. Serve on toasted buns.
